Quick Meal Monday 5/3
Here it is Monday again! My meal today was a huge hit with my family!! I usually get dinner started before I leave for my afternoon route because when I get home I only have 45 before baby girl has to be at ballet! Well today I was to busy goofing off with my coupon buddies in Alvin!! I DID NOT GET DINNER STARTED!!! Well thankfully I came across a recipe that took me no time to whip up!! I left it in the oven and my son (he is 15) was able to turn of the oven!! Everyone loved it!! They cleaned their plates!! EVEN THE GREEN BEANS!!! WOOT WOOT!! Here is the recipe!
6 bacon Pieces
1 egg Beaten
3/4 C Crushed Ritz
1 lb beef (I actually had about 1.25 lb)
1/2 c Ketchup
2 tbls brown sugar
2 tbls mustard
First I put the bacon on a microwave safe plate. I put a paper towel under it and over it. I put it on high for 2 minutes. I just wanted it cooked not crispy.
Then, I placed the meat in a bowl and added the egg and the crackers. Anytime I use ground beef whether it is to make burgers or meatloaf or whatever I always add salt pepper mustard and Worcestershire sauce to taste! I combined and made six patties. after the patties were made I place the bacon around them and secured it with a toothpick. I got a glass dish and lined it with bread (to soak up the grease) Placed the patties in it and baked them at 350 degrees for 30 Minutes.
Combine the Ketchup, mustard, and brown sugar. Brush on the patties, sprinkle with cheese and bake another 10 minutes!!
