Quick Meal Monday a day LATE!!

I am sorry I am a day late posting my Quick Meal Monday segment.  It was a crazy day yesterday.  I made a roast in my crock pot.




  • 4 pounds chuck roast
  • salt and pepper to taste
  • 1 packet dry onion soup mix
  • 1 cup liquid (I used 1/2 c beef broth and 1/2 red wine) 
  • 2 garlic cloves chopped
  • 3 carrots, chopped
  • 1 onion, chopped
  • 3 potatoes, peeled and cubed
  • 1 stalk celery, chopped
  1. Take the chuck roast and season with salt and pepper to taste. Brown on all sides in a large skillet over high heat.
  2. Place in the slow cooker and add the garlic, onions, soup mix and liquid.
  3. Cover and cook on low setting for 8 to 10 hours. 
** I added the veggies about half way because I did not want them to be to mushy, but you can add them in the beginning if you like**
