Chicken Salad

Let me start off by saying that I LOVE CHICKEN SALAD!!!! If it was up to me it would be its own food group! Having said that I found an awesome recipe on allrecipes.com.
Ingredients
- 4 cups cubed, cooked chicken meat
- 1 cup mayonnaise
- 1 teaspoon paprika
- 1 1/2 cups dried cranberries
- 1 cup chopped celery
- 2 green onions, chopped
- 1/2 cup minced green bell pepper
- 1 cup chopped pecans
- 1 teaspoon seasoning salt
- ground black pepper to taste
Directions
- In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.
I made a few changes. I roasted my bone in skin on chicken breast. I seasoned them w a garlic wine seasoning and a little bit of poultry seasoning. I put a little bit of olive oil in the roasting pan and put the breast skin side up in my preheated oven. (it was preheated to 450) I let them cook for 35-40 min our until no longer pink. Then I let it cool and cubed/shredded the chicken. I also toasted almonds and pecans in the oven at 275. I put them in there while I chopped and prepared everything else. They are so delicious this way! I reduced the cranberries to 1 cup and I added in a handful of chopped red grapes. I also used 1/2 miracle whip and 1/2 reduced fat mayo. Let me just say it was sooo yummy!!! The paprika gives it a slight smokiness, the crunch of the celery and bell peppers, the sweetness of the cranberries and grapes and the added flavor of the roasted chicken!! It is an explosion of flavors! I made it tonight and it is sitting in my fridge and the flavors are melding! I can hardly wait to try it tomorrow.
